Why is bison meat not popular?

    Couple different reasons. The first is, they are built all wrong. Most of the meat is in the fore quarters with a lot of tendons and ligaments, making for a large proportion on tough meat cuts and a lot of waste in the form of bones and connective tissue. Just not as much marketable meat versus a beef critter.
